Rum Chicken Thighs

Ingredients

For 2 Servings

  • 2 chicken thighs, seasoned with salt, pepper and cayenne
  • 3 tablespoons butter
  • 1/2 cup Malibu rum
  • 2 tablespoons brown sugar
  • 1/2 cup pineapple chunks
  • 1 sprig fresh thyme

Rum Chicken Thighs Directions

  1. Pre-heat oven to 350 degrees.
  2. Place chicken thighs in bottom of casserole dish. Cut butter up and place on top of chicken. In separate dish, mix together rum, brown sugar and pineapple chunks. Pour over chicken. Sprinkle with fresh thyme. Cover.
  3. Bake for one and a half hours (baste, if you want, half way through). Serve with rice. Enjoy!
