Shrimp and Cheese Grits

Ingredients

For 2 Servings

  • 2 cups milk
  • 2 tablespoons butter
  • 1 cup quick cooking grits
  • 9 one inch cubes Colby Jack cheese. (I purchased a bag of cubed cheese)
  • 3 slices uncooked bacon
  • 1 lb raw shrimp, shelled and deveined
  • 1/4 piece onion, sliced
  • Salt and pepper to taste
  • 2 cloves garlic, chopped

Shrimp and Cheese Grits Directions

  1. Bring milk to gentle boil. Add butter and stir in quick cooking grits. Keep stirring making sure to scrape bottom and sides. Add cheese and keep stirring. If it becomes too think add more milk. Add salt and pepper to taste. When done, cover, remove from heat and set aside.
  2. In skillet, fry bacon. When done, remove from skillet and place on separate plate. Do not drain skillet. Add onion and garlic and stir fry for one minute over medium heat. Add shrimp and cook until opaque and no longer pink. 
  3. Put grits on plate or in bowl. Top with shrimp mixture. Crumble bacon on top. Enjoy!
