Baked Eggs with Hash Browns and Sausage


For 1 Servings


  • 2 tablespoons butter
  • 1 cup frozen hash browns with onions
  • 3 cooked and crumbled breakfast sausage patties
  • Handful of fresh spinach, about 1 cup of fresh leaves
  • 2 thin slices havarti cheese
  • 1 large egg
  • 1 tablespoon heavy whipping cream
  • 1 cup grated Parmesan cheese
  • salt and pepper to taste
  • A pinch each of fresh herbs. I used rosemary, parsley and thyme

Baked Eggs with Hash Browns and Sausage Directions

  1. Preheat oven to 400°F. Melt 1 tablespoon butter in skillet. Fry hash browns in butter until browned and a little crisp; remove from skillet.  Melt 1 tablespoon of butter in pan and add spinach to pan, sprinkle with salt and pepper, and toss over medium heat, 1 minute. Transfer to bowl. Brush one small ramekin with drippings from pan or spray with cooking spray.

    Put hash browns in bottom of ramekin. Put cheese over hash browns. Put spinach on top of cheese, then crumble sausage over spinach.
  3. In seperate bowl, whip egg, whipping cream, salt and peppr, fresh herbs and parmesan cheese together until well blended. Pour over spinach in ramekin.
  4. Bake eggs until puffy and brown around edges, resembling a souffle , 15 to 20 minutes.
