Preheat oven to 400°F. Melt 1 tablespoon butter in skillet. Fry hash browns in butter until browned and a little crisp; remove from skillet. Melt 1 tablespoon of butter in pan and add spinach to pan, sprinkle with salt and pepper, and toss over medium heat, 1 minute. Transfer to bowl. Brush one small ramekin with drippings from pan or spray with cooking spray.
Put hash browns in bottom of ramekin. Put cheese over hash browns. Put spinach on top of cheese, then crumble sausage over spinach.
In seperate bowl, whip egg, whipping cream, salt and peppr, fresh herbs and parmesan cheese together until well blended. Pour over spinach in ramekin.
Bake eggs until puffy and brown around edges, resembling a souffle , 15 to 20 minutes.
