Pre-heat oven to 400 degrees.
Spray a 6 cup muffin pan with cooking oil.
Layer each cup with 2 slices of ham, layered over each other covering the bottom and sides of the muffin tin.
Sprinkle diced ham into each cup over the ham.
Crack an egg into each cup over the ham.
Sprinkle with salt and pepper.
Rip the slices of cheese and place pieces over each egg in the cups.
Sprinkle with fresh thyme.
Bake in oven for about 10 minutes or until the whites are cooked. Enjoy!
