4 chicken thighs
2 ruby red grapefruit, juiced with pulp included. I even scraped out some of the insides of the grapefruit once juiced and used it as well
1 jalapeno (or hot pepper of your choice), chopped
2 tablespoons ginger powder
2 tablespoons black pepper
4 teaspoons Adobo seasoning with cumin
Salt to taste
6 tablespoons butter
7 Green Onions, white and green part chopped
2 cups fresh pineapple chunks
1/2 red onion
6 sprigs fresh thyme, leaves removed
1/2 cup sliced almonds
2 cups rice
5 cups fresh spinach, chopped
2 cups white wine
Marinade from chicken
salt to taste
